Imagine a homemade boiled custard, peanut butter sandwiched between chocolate wafer cookies, and sliced bananas layered all together and topped with Cool Whip and dry-roasted peanuts...definately not for the faint of heart~
1 cup sugar
3 tablespoons all-purpose flour
dash of salt
2 large eggs, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
1/2 cup creamy peanut butter
1 (9oz.) pkg. chocolate wafers
4 medium bananas, sliced
8oz. Cool Whip, thawed
1/2 cup dry-roasted peanuts
Combine sugar, flour and salt in heavy saucepan. Whisk in eggs and milk, cook, whisking constantly, over low heat until thickened. This could take as long as 25 minutes. Remove pan from heat, stir in butter and vanilla. Set aside.
Spread 1/2 teaspoon peanut butter between 2 chocolate wafers, forming a sandwich; repeat with remaining peanut butter and chocolate wafers.
Place sandwich cookies in the bottom of a 3-qt. bowl. Top with banana slices. Pour custard over bananas, cover and chill 8 hours or overnight.
Spread Cool Whip over the top of custard and sprinkle with peanuts to serve.
