You can have this tasty Mexican fare on the table in less than 30 minutes, and young and old alike will love it! It has been one of our favorite meals for many years and you can bank on it that it will become a favorite of yours as well.
1 lb. ground round
1/2 cup chopped sweet onion
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon salt
1 can each of cut green beans and kidney beans
canola oil
6 (10-inch) flour tortillas
1 large tomato, chopped
1 head lettuce, chopped
1 cup or more of shredded cheddar cheese
Larry's Favorite Dressing
Cook ground round, onion, and garlic in a skillet until browned, drain off fat. Add chili powder and salt. Set aside and keep warm. While meat is cooking combine beans with liquid in a saucepan and heat. In a heavy skillet heat 1/4 cup canola oil over medium heat. When hot, fry tortillas, one at a time, just until they start to brown, on each side. Drain on paper towels.
For each serving: Tear a tortilla in pieces and place on a dinner plate. Layer as follows: meat, beans, tomato, lettuce, and cheese. Serve immediately with LARRY'S FAVORITE DRESSING.
