This delightful salad hosts an unlikely assortment of ingredients, yet it all comes together in the end to be one of the best salads you have ever ate. Dates, oranges, roasted peanuts, and toasted coconut along with a homemade creamy peanut butter dressing makes it very special.
1/2 cup sour cream
1/2 cup creamy peanut butter
1/4 cup plus 2 tablespoons milk
1/4 teaspoon salt
dash of garlic powder
6 cups mixed salad greens
1 (8oz.) pkg. pitted dates, chopped
6 oranges, peeled, sectioned, and coarsely chopped
1/4 cup chopped unsalted dry roasted peanuts
1/2 cup flaked coconut, toasted
Combine sour cream through garlic powder, stirring well. Cover and chill. Place greens in a bowl. Combine dates, oranges, and peanuts; spoon over greens. Drizzle with 1/4 cup dressing. Sprinkle with coconut. Serve with remaining dressing.
