This peanut butter pie is so scrumptious! The flavors literally leap around your taste buds.
1 9-inch graham cracker crust
12 oz. cream cheese, softened
1 1/2 cups peanut butter
1 1/2 cup sugar
1 cup whipping cream
1/2 cup sugar
1/2 cup whipping cream
2 oz. good-quality unsweetened chocolate
1/2 stick butter
1/2 teaspoon vanilla extract
Mix the cream cheese, peanut butter and sugar together in a mixing bowl until well blended. Whip the 1 cup whipping cream with an electric mixer until stiff, fold it into the cream cheese mixture. Spoon into crust.
Combine the 1/2 cup sugar and the 1/2 cup whipping cream in a saucepan and bring to a boil. Reduce the heat and simmer, without stirring, for 6 minutes. Remove the pan from the heat, add the chocolate and butter, stirring until melted. Add vanilla.
Carefully pour the topping over the pie. Refrigerate, uncovered, for at least 4 hours.
