If you have been looking for something a little different in the way of a side dish or salad, be sure and try this recipe. It requires no cooking and is prepared the night before you need it. Anyone that tries it always asks for the recipe.
1 cup sugar
1/2 cup vinegar
1/2 cup vegetable oil
1 tsp. salt
1 tsp. black pepper
1 (15oz.) can white shoe peg corn, drained
1 (15oz.) can French-style green beans, drained
1 (14oz.) can baby peas, drained
1 (4oz.) jar pimientos, diced
1 small bunch green onions, peeled and chopped
Combine sugar through pepper in a small pan and boil over low heat, stirring constantly, until the sugar dissolves. Combine the corn, beans, and peas in a bowl. Add pimientos and green onions. Pour the dressing over the vegetables, stir well. Refrigerate covered overnight. Drain and serve.
Serves 10
COOKS NOTE: Save the dressing and pour back over any remaining salad and refrigerate. The next day drain again and serve.
