IT'S SUMMERTIME & the LIVING IS EASY FRESH PEACH CAKE

It's summertime and the living is easy, fish are jumping and the cotton is high, your Daddy's rich and your Mama's good looking, so hush little baby don't you cry....Mama's got a fresh Peach Cake in the oven!

3 eggs, well beaten
1 3/4 cups sugar
1 cup vegetable oil
2 cups flour
1 teaspoon each of baking soda, salt and cinnamon
2 cups sliced fresh peaches ( I really like the white ones in this cake)
1/2 cup chopped pecans (optional)
1/4 cup fresh orange juice
1 teaspoon vanilla extract

Mix all ingredients in a large bowl thoroughly by hand. Pour into a greased and floured 13X9 pan. Bake at 375 degrees for 50 minutes.

  2. I love the fruit cakes, especially peach! I am not a baker but always wish to make something like this for my kids' snack time.... Thanks for sharing and inspiration.... I will try baking soon! =)
