EASY CHICKEN & RICE SOUP by Shannon Riley

package of chicken thighs (or whatever you prefer.)


2 stalks of celery

1/2 small onion

1 tsp cumin

Italian Seasoning mix

salt & pepper to taste

chicken bouillon


Simmer chicken with onions celery & seasonings until chicken is thoroughly cooked. Remove chicken, dice or shred. Add sliced mushrooms , chicken and bouillon. Simmer until mushrooms are done.
